3 Tbsp. raw honey
2 Tbsp. lemon juice
1 Tbsp. orange juice
2 scallions, finely chopped
1 tsp. finely chopped tarragon
1 tsp. finely chopped thyme
1 tsp. finely chopped sage
1 tsp. fennel seeds, toasted and crushed
Freshly ground black pepper to taste
4 boneless, skinless, chicken breast halves (about 1 lb.)
In a large bowl, combine honey, lemon and orange juices, herbs, scallions, pepper and
fennel seeds. Put the chicken in the bowl and marinate for 1-2 hours.
Grill the chicken, turning constantly while basting with the marinade until cooked.
