-10 oz. edamame (buy them fresh or frozen, shelled and cooked)
-1 lemon’s juice AND zest
-1 garlic clove
-1/2 tsp. cumin
-1/4 C. olive oil
-salt/pepper to suite taste
- Throw all ingredients into a food processor.
- Pulse until finely chopped.
- Continue pureeing while adding in the olive oil in a steady stream until smooth.
- Season with sea salt and pepper to suite taste
- Grab a few whole wheat crackers or pita chips and start dipping!
