Easy Edamame Hummus

-10 oz. edamame (buy them fresh or frozen, shelled and cooked)

-1 lemon’s juice AND zest

-1 garlic clove

-1/2 tsp. cumin

-1/4 C. olive oil

-salt/pepper to suite taste



  1. Throw all ingredients into a food processor.
  2. Pulse until finely chopped.
  3. Continue pureeing while adding in the olive oil in a steady stream until smooth.
  4. Season with sea salt and pepper to suite taste
  5. Grab a few whole wheat crackers or pita chips and start dipping!
